WHere is an easy take on a cocktail from the seasonal menu. It's a large-volume prepared mix that's packed with the flavours of a Christmas time, rendering it ideal for your celebration. Any leftover citrus syrup to use in morning drinks, sweets, or to make additional servings of this cocktail.

For the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Syrup: Combine the listed items inside a pot, bring to a gentle boil, mixing until the sugar dissolves. After that, turn off the stove and leave to cool down entirely. Decant into an sterilised bottle, seal and store in the refrigerator, where it will keep for about one month.
To make Premix: Pour every spirits and syrup into a big jug, allow it to infuse for one hour, then strain preferably using cheesecloth, so it's perfectly clear.
For serving: Measure 85ml of the batch mix to a mixing glass packed with ice, gently stirring carefully for a minute until cold. Pour to a chilled martini glass or a similar vessel, decorate with some cranberries and complete it by giving it a quick spritz of mandarin oil above the glass.
